Still looking at this but I think it might be some rounding taking place somewhere and then the types value could be off. I did a quick workaround map where I used an expression and set it to round to 18 decimal places which I think I counted in your data. https://jsapi.maps.arcgis.com/apps/mapviewer/index.html?webmap=2dbaa2d3325e41f7a8c4a59378535e62

If you can share a sample of the data I can try to reproduce the issue? You can drop it into a group and invite russell_jsapi

This is possible with hosted services that have a fulltext index. This blog outlines how this works https://www.esri.com/arcgis-blog/products/arcgis-online/mapping/searching-for-features-in-maps-and-apps/ When no index exists the search will do just a starts with search query.

Is this a Date Only field or the classic Date-Time on a hosted feature layer? We do support this type of relative filtering in Map Viewer with Date-Time and have Date Only support coming in the next update.

Heatmap is using feature density with kernel proximity method which does not leverage a field. https://developers.arcgis.com/javascript/latest/api-reference/esri-renderers-HeatmapRenderer.html

For a field to be searchable and, therefore, appear in the drop-down menu, it must contain strings or integers and not use a coded domain. Integer fields only support the Equals condition. For the best search results, choose a field with unique values. https://doc.arcgis.com/en/arcgis-online/create-maps/configure-feature-search.htm

The symbols could have been downgraded when you checked on Use symbols types compatible with all clients in Pro before publishing" or the layer item or web map has a symbol being used vs. what exists at the service level. I would have to check out the map/layer to verify this.

If you are using a hosted feature layer in Online you can add a full text index on the service through the layer settings and then search will leverage that index if it exists https://doc.arcgis.com/en/arcgis-online/manage-data/manage-hosted-feature-layers.htm#ESRI_SECTION1_0D8D9E34EAB642228377FAAE466A826C.

Are they in the same Symbol? 2 quick ways I think you could do this Have the polygon layer with a marker layer with a centroid placement. The text in the point could be static or driven by an attribute connection. Then publish to Online making sure to keep the compatible symbol option unchecked. Quick example https://www.arcgis.com/apps/mapviewer/index.html?webmap=25c5785b63db4b809e43b8597509e365 Or publish the map with 2 layers. One with a centroid layer and another with a polygon footprint layer. Then set the scale ranges to how you would want them defined.
