As Darren Wiens you can set an mxd file to read only through file explorer to disallow other users from saving over it. an open your PC with any user expect administrator user. or save a backup copy.

maybe you don't follow Jayanta Poddar steps well. Frist create multiple labels in ArcGIS. then convert labels to annotation ( GIS annotation not CAD annotation). use the Annotation layer to convert it to CAD Annotation. Export To CAD—Help | ArcGIS Desktop I hope that clear Jayanta suggest .

If you want to calculate dredging volume between 2 raster, use Cut Fill tool. Cut Fill—Help | ArcGIS Desktop run this tool . then open attribute table of result raster. and sum the minus volumes and positive volumes.

There is another date in dynamic text , maybe help you. Date Saved . it is not changed if you don't save your MXD after that. But still Michael Miller suggest is better than that and more appropriate for your case.

Why first polygon with first line? Do you mean OBJECTID 1 with OBJECTID 1? If so You can add Get Field value and Select By Attribute. Just get the OBJECTID field value , then use this value to select by attribute the same OBJECTID feature in another feature class . Then do intersect tool and get the output.
