As you create this picture  (symbol) in your question , create other one and save it to PNG extension. then do the following as in the picture: from layer properties go to symbology tab then click to your symbol to open symbol selector>edit symbol > outline > edit symbol > then choose picture line symbol from Type. and brose for you picture. that is all. ... You can see the summarize of your field in symbology tab if you do the following: Go to symbology of layer properties , use Quintiles symbology , then click classify as in the picture and you will find the summarize of field in classification statistics window.  or you can use Summary Statistics—Help | ArcGIS Desktop to get summarize table then decide how to symbolize it. ... Good that is the name in the new source like the old one. so the easy method to change all layer at once is : change the folder name of the old source. so when you open arc map you will find exclamation mark beside each layer set one of this layers source to the new one and all layer will change automatically. ... If you want to know the parcel id that not found in parcel layer. it will be so easy. just Join build layer using parcel id field with parcel layer. and make sure that you check Keep only matching records. after you finshed your join select all building, then remove join. after that switch selection for build layer and you will get the builds that you ask about. ...
