@MPach I have a hunch that it could have something to do with first creating a multipart polygon (like your first screenshot shows) and the reordering of vertices that occurs when storing the feature's geometry. My other hunch is that you may not see the behavior when creating a singlepart feature. It's also possible that ArcMap behaved the same way.
Instead activating Continue Feature, you could use Edit Vertices to see where the last vertex is (the red one). That is where Continue will pick up from.

@MPach Is the goal to delete or move some unwanted vertices in an existing feature? If so, it seems like you should use the Edit Vertices tool to delete/modify those vertices.
When you use Continue Feature on a polygon, your first click in empty space will create the first vertex of a new part (to create a multipart polygon) - so I wouldn't think that is what you want. BTW, this is how ArcMap works as well. If you want to avoid the multipart feature you could activate the Continue Feature tool followed by the Replace Sketch command - maybe that is actually what you want?
That will get you back to sketching the feature from the last vertex. From there you can make sure you have vertex editing turned on (see image below) so that you can fix those mistakes as you go - by hovering over a vertex and either deleting or moving it (something ArcMap couldn't do).
It also sounds like you are using the Trace tool in your workflows so maybe you are seeing some kind of difference in how it works in ArcMap vs. Pro? I'm not really clear on that.

I can think of a few ways to do this in ArcGIS Pro:
Use Traverse to create a temporary line that will be used to split a polygon.
Open Split > By Feature tab > select that line as the Input Feature > for Target Feature, select the polygon to split, then click Split
Alternatively, in step 2 stay on the Interactive tab in Split and start a sketch (click once anywhere in the map), then use the Replace Sketch context menu command to update the sketch with the line's geometry and finish the edit to split the polygon.
Can you describe the workflow you followed in ArcMap, was it similar?

The questions I have:
When you say you "created all the feature templates on the service", what do you mean? The typical workflow is to start with data in an geodatabase (enterprise or file geodatabase) > author layers, including templates > publish. Or are you saying you added already published feature services to a map in Pro as the first step?
If you are adding existing feature services to Pro as the first step, how were they published to begin with, and to where? Referenced, Copying (hosted)? From Portal or ArcGIS Online?
Where are you publishing the web map? Portal, ArcGIS Online?
How are you publishing the web map? Referenced, Copying?

I haven't seen where the templates are gone completely, but I do see where templates are automatically generated in the web map to match up with the symbology on the layers. Example: if a layer uses a unique value renderer a template is created for each symbol class. I'm not 100% certain, but I think this is due to a limitation of the web map - since a template is required to create a specific symbol class while editing in the web map (in portal or AGOL).

You can do this using the tools provided on the Edit Vertices toolbar.
Key steps: First switch to the Select By Rectangle tool, then switch to the Delete Vertices tool. Now when you drag a selection for deletion, it will constrain to a rectangle.
