What type of AGOL account (Trial, Personal, Organizational) do you have? Once the subscription of your ArcGIS Online organizational account expires, you should be able to view the content for a few more days, but you can't make any changes to it. You may lose your hosted content including applications after a few days from your date of expiry. According to View and report status—ArcGIS Online Help | Documentation "Administrators will have limited access to the organization and its resources until the subscription is renewed. Any content previously shared to the public is still available. Administrators can delete it but cannot edit the details or change the sharing status."

Check the datatype of the field. If you see numbers in a field that has TEXT datatype, then you can create a new Field with appropriate numeric (LONG/ DOUBLE) datatype. Then Calculate Field to get the values from corresponding TEXT field to LONG/DOUBLE field. This new field can then be symbolized using Graduated Color/Symbol.

Was the previous installation of ArcGIS Enterprise executed through Enterprise Builder? Deployments set up using another method cannot be upgraded using the ArcGIS Enterprise Builder. Moreover, Portal is licensed through a JSON file, that is generated in My Esri. A particular version of Portal requires the same version of JSON file license. e.g. You cannot license ArcGIS Portal 10.9.x using a Portal license of 10.8.x or vice versa. The GIS Server is licensed through the ECP file.

Unless your organization/ institution has license for ArcGIS Enterprise that you could work with, the only other option I could see is to opt for an Instructor-led training like Sharing Content to ArcGIS Enterprise | Esri Training Instructor-Led Course. Here, they will provide a virtual infrastructure with required software installed for your hands-on training. You could also check with your local distributor if they impart similar instructor-led trainings as well. As far as self-learning is concerned, you could refer some of the e-learning videos, documents, etc. available on Esri Training site, or the ArcGIS Enterprise Documentation. Unfortunately, getting an access to ArcGIS Enterprise might not be possible in this case. Check with your local Esri distributor, if an evaluation license of ArcGIS Enterprise can be made available, before you reach to a conclusion. All the best!

A few things to note regarding Named User licensing for ArcGIS Pro. 1. Only GIS Professional (Advanced, Standard and Basic) User-type includes ArcGIS Pro (Advanced, Standard and Basic) license respectively. 2. Creator is the only User-type that is compatible to ArcGIS Pro Add-on license. So, you could either upgrade your Editor User-types to GIS Professional (Advanced, Standard and Basic) user-types. Or you upgrade your Editor User-types to Creator User-Types, and purchase ArcGIS Pro add-on licenses. *However you may opt for Single-Use or Concurrent-Use licenses as well.

What licensing type do you have? If it's licensed through named user (ArcGIS Online), ArcGIS Pro automatically notifies you, downloads and updates itself internally. If you have Single Use or Concurrent Use license type, then you need to download the lastest or lower available version of Pro from My Esri, and upgrade the existing version manually. I am not aware of the registry entry part though.

This might not be the most appropriate workaround. Would it be fine for you, if the symbol size vary continuously based on an attribute? If that works, then you could use your primary symbology option as Graduated Colors, and vary symbology by size.
