For a start, 11.2.0.3 is not supported with Desktop 10.5. Oracle 11.2.0.4 is the base version supported with Desktop 10.5. Oracle database requirements for ArcGIS 10.5—System Requirements | ArcGIS Desktop What version of Oracle Client is being used? Are you using Instant Client or Oracle Full Client? Can you connect using SQLPlus from the same machine?

If you want to connect to a user-schema geodatabase, a transactional version other than DEFAULT, or an historical version, use the Geodatabase Connection Properties dialog box. SQL Server 2012 SP3 is the minimum Database Version supported with 10.5. So try that. I'll suggest creating a new post for these issues as you are not even able to upgrade the sde gdb to 10.5. Can you upgrade using Desktop 10.3.x? Note: Make sure you have backups before testing suggestions...

If that message is in Green, then it is just a warning,not an error. This warning will be highlighted in green in the Pre-requisite check and the Upgrade process when you run the upgrade in ArcCatalog, but it will not prevent you from upgrading successfully.

Yes, as per that link SQL Server 2012 SP3 is supported with 10.3.x and 10.4.x both. That link mentions only the supported base versions, indicating SPs above it are automatically supported, unless specifically mentioned as 'not supported' on that same page. Just because others faced issue while using SQL Server 2012, does not mean that you may do so as well. A lot of things may matter: data size, Server Configuration, DBMS configuration, N/w. So you should rather test with SQL Server 2012 first on a test server, to see for yourself whether you face any such issues.
