About the shift between the grid and your extend polygon is think it is coordinate system error like DAN said. may be your feature class has not defined coordinate system. after you project your feature class make sure that you checked on Generate polygon Grid that intersect input feature datasets , to get the grid that you asked.

I tried to smooth contour line using Smooth line tool. the DEM cell size is : 18 meter the minimum distance between two close contour lines is : 3.3 meter Using BEZIER_INTERPOLATION in Smoothing Algorithm I didn't get overlapping lines. Using PAEK in Smoothing Algorithm I didn't get overlapping lines in 3 meter Smoothing Tolerance. I didn't get overlapping lines in 18 meter Smoothing Tolerance. I get 1 overlapping line in 50 meter Smoothing Tolerance.

I don't see the result "contour lines" , but I think the result is not good because cell size of raster. so if you have a standard or advanced license you can use Smooth Line to get better result . smooth line

just used the grid option in data frame properties. I can set the number of rows and columns I want, but can't seem to adjust the unit size. I want to say that the grid in data frame properties allow you to set specific interval and no number of row and columns. this picture is for the second type of grids (measured grid) as you see in the picture you can set intervals not number of row and columns. so if you want to change unit to be Inch as you want you can do that after create the grid. go to Properties . then Intervals tab as below picture. then choose inches.

Using Feature linked , is for update attribute in feature class , make the annotation attribute updated too. but it isn't for label expression . if you update label expression after you create annotation with Feature linked, The label of annotation will still not changed. If you want to change label expression , make that for annotation layer -annotation stay has all feature attribute- and not for feature class .

It is related to Feature Linked , that is when you create annotation IF feature Linked checked that is mean any update in feature class will update the annotation at the same time. IF not checked , Annotation will be not changed even if you change the data of feature class.

You are Ask about how to survey in 50x30 ft area. and GPS not the best solution. so. If you can fix column or any permanent target in two corner of garden. you can measure two distance from plant to 2 corner, then you can draw it in Arcmap from 2 distance intersect (DISTANCE-DISTANCE). -use the recommended projection for your country. your extent area will not cause a big error . -Frist Draw corners. you can depend on GPS if you need to get actual coordinates but you should correct the data with your area dimension ( the distance between corner must to be (30 ft / 50 ft ) -then use Distance - Distance to put your plants coordinates in the right place.
