It is a coordinate systems problem. First, What is the coordinate system for your raster before you transform it? (Could you print screen the spatial reference in source tab of layer properties?) Next i used the Project tool from arc toolbox (Projections and Transformations-Raster) and i create a new shapefile with GreekGrid as spacial reference. Why did you use Project tool to transform the raster, instead of creating a new shape file with same coordinate of raster? (then transform the result after finishing clip process) Finally, What is the coordinate system for data frame within all this process?

National coastline it is for coastal country .And the coastal country intersect the coastline. use intersect tool to make National coastline. And make the output is Line Intersect note.: Before use intersect tool for coastline, you should to be sure that coastline intersect the coastal country. if it doesn't, you will measure maximum distance between coastline and the edge for coastal country. then put this value in the XY tolerance of intersect tool.

Use Near tool (Near ) or Generate Near Table (Generate Near Table) for that purpose. that will measure the shortest distance between coastline and each region ( the nearest coastline) .

This would assume that the the distances are all equally distant from each other which they are not. ???? Mean center is not the equal distance from each other points. the following picture is the Mean Center to random 3 points. I think that you want to do 3 circles intersect each other and not Trilateration. Trilateration is not as your post picture. in your Wikipedia link you will find the following picture: look for intersection in 3 circles,it is an area and not a point as you want. where the three circles do not intersect so the point has to be placed manually .

The result from Zonal Statistics as Table is a table, and that table will has one required OBJECTID. in your picture the table has two required OBJECTID. so I think that the table is modified. try again the tool and snapshot the original result.

I know that the thread is relate to symbology. But I think it is difficult to create that symbol using symbology in Arc Map. So I will try to make this as a features (and you can convert it to graphic later) I can say that your symbols can be done, Using model builder. But I want to know if you have an advanced license?
