The process is very similar to ArcMap. First select the features you want to export to the new Feature layer or shapefile then right click on that layer in the contents pane then go to Data>Export Features. This will open the copy features tool, confirm the Input Features is the correct layer and specify the Output Feature Class (it will default to the project's fgdb). It will only copy those features that are selected, if no features are selected it will copy all features.

What version of ArcGIS pro are you running. Version 2.0 has both a catalog pane and view. While neither is a replacement for full blown catalog available in ArcMap 10.x its a start.

I downloaded the two data sets you linked and they overlay fine. For the Oklahoma Counties Shapefile you need to download a separate .prj file for some reason (not really sure why they did it this way) and make sure you copy it to the same location as the other files that make up the shapefile (.shp, .dbf, etc.).

It is not necessary to unversion a GDB before making the changes you indicated. However, make sure you are making the changes as the database owner.

I am considering a Single Machine deployment of ArcGIS Enterprise base deployment with Imagery Server on a single machine for a small to mid sized public water & sewer authority. Current projections call for about 25 users roughly half and half viewers/editors. I had originally allotted capacity for a single ArcGIS Server machine and second machine to run my SDE GDB. Since these are both VMs I am hoping to consolidate the resources into a single machine and deploy all the components on it. If this isn't possible I will need to request additional resources from IT. My first questions is single machine deployment feasible? Second question is can I scale out by adding hardware at a later date or am I married to a single machine deployment?

Label is what will show up on survey form. The Name is the value entered into the data table when the form is completed. This is a way of displaying plain language responses for your user but enter database friendly values into your tables.

Where did the coordinates come from? If you choose the Identity tool and click on where the point is supposed to be what is the location given? Do you have a the correct spatial reference defined for your map?

You stated originally "Burn area shapefiles had an unknown projections so I projected all of them with WGS 1984." You need to determine what the coordinate system of the data is before you can project it into anything else. This can usually be done by checking the metadata or contacting the creator of the data. Once you identify what the Coordinate System is then you need to define the project for these shapefiles. then you can project it into the proper projection to do your analysis. I don't work with data from S America so I can't be sure but would assume your best bets are either "South American Albers Equal Area Conic" or "South American Lambert Conformal Conic".

Mercator is probably not your best choice of Projections for calculating areas. You should look for something that is an equal area projection. Since you are only looking at Brazil there is probably some type of National projection that will meet your needs. You also need to identify what the Shapefile's actual projections are and define them before you do any re-projection.

For the input you are going to have to think about recreating each data point either input or calculated as a row in your xls form. You might try grouping the questions that represent your old horizontal format. As for the printing since all of the data is stored in a database you can control the visualization via some type of report generator to replicate what you have been using.

You would probably be best severed by creating a feature ID you create and control if you are switching back and forth between software packages. Adds a bit of overhead to managing the field but has the ability to save you time and effort in the long run.

Topolgies were supported in 9.3 so it should work. ArcInfo is the highest level of desktop. If you can copy or import the feature class into the feature dataset you are good to go provided the spatial references match. However, you are walking without a tightrope given that 9.3 has been retired for sometime so you won't be bale to get any official technical support.
