Can you provide some screenshots that show what you're describing?  For example, you have a layer highlighted in the Contents pane of a map view (or layout), you then do something in the Symbology pane (what change are you making? does it require hitting Apply?) and then the layer in the Contents goes to another layer, no layer? Hi Luke,  It's good that you love ArcGIS Pro.  It's bad that you say you can never use it.  What was the last version of ArcGIS Pro that you used?  It's being actively developed so things that aren't there yet are often slated for a future release (yes, I know, it's not all there yet, so for things that you really can't do, or things that are too high on one's annoyance gauge [we'd like to make sure we know about these btw] you can stick with ArcMap which will be around for a while). Right-click to create a FC: And the cool thing is that as functionality is being developed in Pro, the teams are taking customer feedback into consideration - all of those years of ArcMap feedback are not lost in Pro.  For the create feature class workflow, remember this? https://community.esri.com/ideas/4141-alter-field-order-during-new-fc-or-table-creation  Try it in Pro. Hi Chad, With the layer highlighted, go to the Appearance tab where you'll see the symbology dropdown. Options for symbolizing by quantity are presented. Rick - the Spatial Analyst team has been looking at this and in the daily builds of Pro 2.4 I'm running the tool on your data in less than 3 seconds. So it looks like this will be working well with the release of 2.4.  To anticipate your next question (I don't have access to 2.4, what about now?) what you could do would be to run something like Raster to Point which will give you the elevation values for each cell, and then run Add Geometry Attributes on that to end up with x,y,z.  Hopefully that would keep you going until 2.4 hits the streets. ...
