Right now I use a .exe (Made with WinRAR) that makes the folders, which includes a toolbox that they can fire to make a point, line, or poly that follows our org data standard, apply metadata (in Arc). I've sorta-played with rolling that up in a template, but got stuck on some template bugs. One idea would be to carry that further with some python that would create the folders, maybe python it all, attach to a tool and add to the analysis gallery, then roll that in a template.

In Arc Map, one can right-click on a XY Event Layer and change the data source to (another) XLSX, XLX, TXT, CSV, DBF, etc...... imagine you got a new spreadsheet showing the locations of the latest Zombie Outbreak. You can change the coordinate system, the XY fields.. Pro....

You example is hard to understand without animation...perhaps Balsamiq. Rapid, effective and fun wireframing software. | Balsamiq might convey the idea better..... It's important to note, most of us do not earn our bread and butter in "Project Containers". Most organizations have massive, central repositories of GIS data, in folders, FGDB's, Shapefiles that dude-who-retired-last-year kept in his My Documents Folder, raster data sets, terrabytes of lidar and raw air photo that will never be uploaded to the so-called-cloud, SDE connection files, GIS Server Connection files. A project should only contain what is necessary to complete that project and (different topic) the same SDE connection files should not be copied for every project (the case when using templates). I should easily, and without excessive clicking, go into (I've recently learned that many people call their main GIS folder the X Drive. Do GIS people have a Star Wars thing?) the "X" drive, browse, expand folders, GDB's, and SDE connections, keep those tree views open, then go into my project folder, and see what I need to see (also!). In Arc Map, one can fill multiple holes in Polygons: Filling all holes in selected polygons—Help | ArcGIS Desktop This does not appear to be the case in Pro (perhaps I have not yet found the tool yet?) Fill a hole in a polygon feature—ArcGIS Pro | ArcGIS Desktop On the same topic, in the Arc Map production mapping tool bar, making a polygon whole is a single button operation. Fill a hole in a polygon feature—ArcGIS Pro | ArcGIS Desktop appears to consume very many steps. Continuing, again, with the production mapping toolbar, poking holes in a polygon is once again a single-button operation. Haven't found the same very-few-steps workflow in Pro.

In Arc Map, I can open two GP tools. Perhaps I have a few things going on at once, and I want to fire off some GP tools that will run sequentially over night, and each one is doing something different. I can open as many GP tools as I want, and not have to fuss with Model Builder. Or, more importantly, with tools I don't use often, I need to open up 2 or 3 and compare the Input/Outputs, look at the UI help (click mouse in input thingy), to see exactly what is going on. As the OP points out, not being able to rearrange the tools as one wishes in available screen real estate, being limited to having to click a button and see only one tool at a time is a work-slower.

"couldn't you just go to your 11X17 layout, Activate the map frame and do all of your panning, zooming, basically do all the work in the map that you need. Then export/print the layout." Or, as I could in Arc, just do my panning, zooming, basically do all the work in the map that I need in data view, then pop over to layout view, where I generally use fixed engineering scales to fine-tune the layout (e.g 1 inch = 100 feet), and finish things up. While we're on the topic, in Arc, I can just right-click in layout and select "Fit to Margins". Can I do that in Pro Layout? The workflow is significantly faster in Arc than in Pro, as, in Pro, I now have to fumble around with this new "Activate" button. Perhaps a project options thingy: Limit project to one map which would automatically tie the map to the layout. I can see where "Dude Where's My Water Meter" guy would appreciate that....

This is especially important when, perhaps, I'm using a georeferenced map, for example, that is already ADA compliant (colors) and I need to get my symbology as close as possible. Can I do this in Adobe? Yes, but how many folks have Adobe PS?

yeah, I've heard from others that, how to say this, working with Adobe backend code and API's "ain't what it used to be". They'r reluctant to support any workflow that doesn't do everything in the "cloud". Hmmmm....where else have I seen that......
