Currently in Pro you can use Shift to multi-select grid components and update the interval for all of them at once. When you multi-select only the common properties are shown, which for grids/labels/ticks is the interval values. It's not exactly what you are asking for, but may be a useful trick for now.

As of ArcGIS Pro 3.5.3 it is not possible to update the PDF metadata for each page in the Accessibility tab. There may be some scripting options available with arcpy.mp, although I'm not 100% sure about that.

The Maximum font size is the text size set for that text group (description/title/label/group name/etc). Just like @DuncanHornby shows, you can select the text symbol to change the maximum font size.

Hi, We are aware of this crash and working on a fix. In the meantime, are you trying to change the way the labels are displayed on the graticule itself? The menu button changes the input format, so you can type the desired intervals in decimal degrees. To change the labels on the graticule, you have to change the label format to decimal degree. That should work without crashing.
