I am no wonder that model not change symbol of feature class in classified depend on field. but I am wonder that is change simple symbol!! How it is done? because to change layer symbology, you should add that layer in TOC and run tool not inside model.

Make table View tool creates same records count of original table. except : 1- you enter Expression In the tool. 2- you have selected some records of table within running the tool.

You Can't Copy tables in TOC. But If you want to create Many tables with different Definition queries . Use Make Table View tool. Make Table View—Help | ArcGIS Desktop

If you don't want to use default value. so I prefer to active Display the attributes dialog before storing new features. This in Editing toolbar menu > options... > Attributes Tab ( look to below picture)

It could be solved, if you increase False Easting or False Northing. but may be cause geometry Error. So I Think this question should be shared in Coordinate Reference Systems Group.

Did you try to Drag points in the histogram ? Just go to symbology > choose Custom type in stretch > open Histograms. and drag points. (also you can add point when you click in none points area)

Add All Values change all symbol that you choose before. But Add Values... doesn't change symbols. I want to tell you that when you change any thing in the symbology field in Edit session , the new value appear in Add Values... Even if you don't save edit. so you can create new symbol for it.
