Currently, this is not supported in the Catalog View in ArcGIS Pro.  On the Supported data types and items -> Files supported as inputs or outputs, it does mention PDF as available on the browse dialog boxes but are not available in the Catalog Pane or Catalog View.  There is a ArcGIS Idea here you can upvote to get more views/traction with the development team. ... I believe so.  If you download the Building Footprint Extraction - Africa - Overview (arcgis.com) model locally on disk, then in the Models Dropdown parameter "additional models" - navigate to where the downloaded model is located and set the Postprocessing workflow to "polygon regularization"  This should work for you.
