Change the values, not the labels. If you change the values, the labels change accordingly. (Sorry, just realized that before I wrote "labels" instead of values.)

Not sure why, but it does the same to me. Do this: 1) labeling: change the values as you like 2) click OK to close the window (apparently I have to click twice) 3) straight after click Apply in the Symbology tab 4) reopen the Labeling and now it should be changed and the symbology reclassified.

Hi, not sure if it is what you need but you can give it a try: change the stretch type into Min-Max then check Edit High/Low value and change the values.

Hi, I am afraid you can't use a Join when your cardinality is One to Many have a look at this: About joining and relating tables—Help | ArcGIS for Desktop the join works only for One to One, or Many to One. I would consider the Relate or a Relationship Class

You can create copies of your layer each of them with a definition query based on what you need to be shown and then publish the service. Then you can create a map by publishing these layers and allow you customer to switch them on and off. The advantage is that the source layer is always the same, as you duplicate the layer and not the feature, so if you need to update with new data you will update that one and not the others. let's say you have your "building" feature make 3 copies: 1: Commercial building (def. query: type = 'Commercial') 2: Residential buildings (def.query: type = 'Residential') 3: ....

Hi, when you convert a raster into a polygon, if the Raster has a Coordinate System, the resultant shapefile will retain that CSR. Make the conversion with "Raster To Polygon" Once you have the shapefile, in ArcMap use the tool "Project" to transform your data from the GDM2000 to WGS84. hope it helps.
