Once you have a multi-machine deployment, you will see an option for which server to use during the publishing process from Pro. If you are creating a hosted feature layer, it will automatically go to the hosting server and be stored in the data store. If you choose to publish a service referencing data in an EGDB, you will get a drop down list of all your servers. The unfortunate part of this is that it will default to the hosting server, so if you are allowing users to publish their own services, you can't really control which server they publish to -- you can only educate them which ones to use.

The easy solution is to use survey123.arcgis.com and add the PortalUrl paramter, then there is nothing to install and your AGE authentication will work as expected. Items you create will be stored in your AGE. You can then create a link to it and put it in your app menu so you don't have to remeber the URL format. Substitue your AGE URL in this format: https://survey123.arcgis.com/surveys?portalUrl=https:%2F%2FMyEnterprise.MyOrg.com%2Fportal

I can't speak to what the documentation is warning about, but... If you want to gain more insight into memory usage by services, open Task Manager and click on the "Details" tab. You will see dozens of ArcSoc.exe processes listed and their memory usage. Each one is a "instance" of a map service. Task manager has some hidden columns with good info. Right click on a column name and you should see "Select columns", then find and select "Command line" Now you will have a column that tells you exactly which map service each ArcSOC is related to. Look for "Dservice=mapservice name.MapServer" With the number of services you are working with, I would go for 64GB off RAM on that machine. 32GB would likley not be enough. Curious what JCarlson thinks about that.
