I'm sorry, I misunderstood the request. The challenge here is that with gradient fills there's not a single color to apply the ramp to. The gradient itself is multiple colors (can be as few as two, but can be many more), so pushing a single color in is a challenge. We'll discuss this on the development team.

There are several ways to do this. The most common is to create unique value symbology and just set the gradient symbol with a different color for each unique value class. See update below

The ArcGIS Pro equivalent of the "Label tool" is the "Auto Text tool" with the one additional step that you need to add a graphics layer to the map first. ArcMap maps had a graphics layer built in which was convenient in some cases but problematic in others. The ArcGIS Pro graphics layer is more flexible in symbology and contents pane ordering.

The lower value is shown and editable in the histogram view as shown in this GIF. The example @lzk222 shows can also be done with an arcade expression for class breaks or unique value symbology. In that case the expression itself is configuring classes.

What I showed was removing styles. Individual symbols, colors, color schemes etc. are "style items". This user experience is a style item selection experience. We have no plans to introduce deleting of style items in the style item selection. This is done via style management which handles the differences between read-only and editable styles.

It's not random - it's what the font author specified in one classification system. Weight is another system - the with increased mouse travel for commonly used weights.

They are sorted by style trait that is written into the font. The order is Regular, then Bold, then Italic with the rest following. This is done to prioritize Regular but it all depends on how the font author has categorized the style. For Proxima Nova, Medium and Black are classified as types of "Regular" which why they appear above Bold styles. You'd prefer alphabetical?

Top level color changes apply to the unlocked symbol layers of the symbol. There's a bug here in that the color picker shouldn't be showing a single color in your case because you have more than one color across all unlocked layers.
