Apologies for the delayed response to you and Ethan Duke.  We've been investigating this behavior for the last few days, and have identified the root cause of the problem that was exposed as part of the ArcGIS Online release last week. The issue is specific to feature services with subtypes and one or more date fields (this includes editor tracking fields) when attempting to work offline.  This impacts all released versions of Collector, though the error messages may differ slightly. Ryan, Collector (Aurora) isn't going to support the tracking capabilities that we have currently (at least not in the same form). You may have seen some news about a new tracking capability that is coming in the platform if you attended the UC or caught this blog post. The one downside of the approach above is that you will lose some of the GPS metadata if you're storing it on the features you're collecting.   We has worked with some folks in the UK who were using the GS15 and they were able to get this working once they had updated the firmware of the GS15 to 5.0.1 (which may not be the most recent).  Older versions were sending an invalid NMEA stream which presented Collector from reading certain sentences. ...
