The first suggestion is to aggressively clear your browser cache. This will often clear up problems. @Jerry_G - we are aware of a firefox issue where changing symbols crashes the browser. Are you running in Firefox? We hope to have this addressed shortly thanks, Mike

Can you tell me the exact steps you are doing? How are you republishing? If you created a web map with the feature service in it, the web map would have a copy of the attribute fields, so you would need to remove/add the layer again. Thanks, Mike

Most likely, you are encountering a bug. Unfortunately, without a reproducible case there's not much we can do to debug the problem. Would you be able to take a subset of your data and publish it to reproduce the problem? And then share the data with us? The problem seems to be related to the character set in your attributes. The second problem you encountered that returned this error: "a local copy could not be created. ReadChunk failed" we've reproduced and identified as a bug that needs to be fixed in ArcGIS Desktop. thanks, Mike

the sharing state of the hosted feature service determines who can see and edit it. If you share it with everyone, then everyone will be able to see and edit it. If you only share it with a group, then only members of that group will be able to see and edit it. You can share the feature service with everyone and disable editing. The owner of the item or an admin of the organization can navigate to the item details page of the feature service and click Open>Open with full editing control. This overrides the disabled editing for the owner/admin for that session. Thanks, Mike

As the owner of the item, you can export the data to a shapefile that will appear in My Content. Just navigate to the item, find the Layers section and click the arrow next to the layer name to export to shapefile. Thanks Mike

What is the data source you use to create the service? Does it have valid UTF8 characters in it? These posts may be useful.
