One use case I can think of for us is that some maps have quite a lot of activity with many varied symbols, some of which may make it hard to see which line is your tracking history. Being able to customise your track will make it easier to see where you have been.
This is also a "maybe" use case - people with colour blindness may want to vary symbology to suit their specific vision requirements?
LindsatRaabe_FPCWA stated it very well. In addition to helping those who may be color blind, having the ability to change the My Tracks line color, width, and pattern would assist in better being able to distinguish the track from other layers if there are lots of colors and patterns that may obscure a blue/light blue line such is the color of the My Tracks.

We are walking service lines and mains. The thickness of the tracks sometimes hinders seeing our points and lines that we need to be paying attention too. I agree that the ability to adjust this is needed.
