Open your web map and for the pop up you want to configure. Select Configure Popups By default the method is A list of field attributes. Change it to Custom Attribute Display. Then select Configure to set up custom popups. you can change colors, fonts, add hyperlinks etc...

You need to set visibility settings for your features. You are most likely exceeding the Maximum Number of records returned by server, for your feature service. By default that is set to 2000 records when you publish a service.

Just to be clear, what do you mean by a multi dimensional Raster? Are you referring to a raster that shows elevations visually. The fields you use for X,Y change them to Text Fields around 30 characters and geometry calculate. That will create a more accurate X,Y location that is generated on the fly.

On a side note I bit the bullet about a year and a half ago and switched to Pro. ArcMap (to me) is far superior for almost all your editing needs. But Pro was built for online and it works very well.

Open the MXD you publish from. Open the Layer Properties for the Feature you don't want to see the field of. Under the Fields Tab, uncheck the fields you do not want to see.

I sounds like when you are assign it to a field agent you are probably doing it with a Survey. When you do that you create a new row in the survey. if that is what you are doing you should update in Pro, ArcMap, or a Web App. You can create a Survey to UPDATE an existing row in a Survey. Using the same service create a new survey with the same fields, but with out a Repeat Function. Look at the two links below. I tried to highlight the differences.
