You used to different spellings of fields,Fields. Does your definition query work if used in a regular query? You should be using AddFieldDelimiters—Help | ArcGIS for Desktop in case you are mixing geodatabases and shapefiles

You may want to check your results. The string field will not produce the results you.d expect. For example you asked for "PERCENTAGE_RISE" > '50' what you are probably getting is 50,51...6,60,61...7...

I have not discovered a way to reorder or turn on , off visibility of fields. What my suggestion does is allow the same field to be displayed as you iterate to the next row. You may have to use your arrows to scroll to the field you want. The field with the black outline will be the field that you'll see. Hope this makes sense.
