For output table, try using the folder icon to the right of the line, navigate to a folder and specify an output name with a *.dbf file extension. There link indicates where Pro models can or cannot be used and whether they can be used in different versions with the Pro versions.

It has its limits according to Mobile geodatabases—ArcGIS Pro | Documentation and the comment There are only a few management tasks you perform on mobile geodatabases, including creating, renaming, and moving the geodatabase. Mobile geodatabases do not include authentication or authorization capabilities, are intended for use by one person or app at a time, and support undo and redo when editing. Any operations at the geodatabase level should be performed solely through ArcGIS. The exclusion of "edit", suggests that those task listed at the geodatabase level are permissable (create, rename, move) and those that aren't listed need to be done by Pro, probably meaning you have to recreate it.

Any version > 5.1.5 has dependency issues with the esri build related to something in the ipython/jupyter stack. try >>> conda install spyder=5.1.5 or what I did was the completely not recommended pip install spyder when you have your clone activated.

I am not seeing an project save () at the end Saves changes to an ArcGISProject (.aprx). The project is saved and the project variable continues to reference the original ArcGISProjectobject. The last sentence suggests that nothing will persist until the project is referenced/opened again after the script runs. you might need the file path from current ArcGISProject—ArcGIS Pro | Documentation
