In the next update of AGOL you will be able to search across all. In Collector the search already searches across all Feature Searches configured in the web map. The app will however only work against 1 geocoder configured in your org/portal

So if your feature service is configured to allow updates to geometry you can you tap on the feature you want to edit, click the up arrow in the popup and you will see the option to Edit the feature. If you have ownership enabled and you do not own the feature you want to edit, the option to edit that feature will not be displayed. Update a feature—Collector for ArcGIS | ArcGIS

If you do not own the service you cannot enable sync on the service. If you do own the service you can go to the item detail page for the service click edit and enable sync at the bottom of the page.

If the valve is already a part of that feature service you can tap on that existing valve and click copy and that will copy all the attributes and can be set at the same location of the existing feature or at the GPS location. Russ

There is no restriction to attachment sizes in offline mode. When on iOS the max video time is 10 mins (online and offline) and there is no limit to the number of photos being taken and attached to features. If you are adding a large number of attachments to be uploaded you will want to be near a strong wifi signal. Also remember when you hit sync you are also pulling down map changes within the offline extent and those could include other field crew members and contain a large # of attachments as well.

So in the tool you click "I want to view JSON" and then when you click on the map item on the left and then on the right the JSON will show up for the map and there will be an edit icon in the top right corner of the JSON and that is where you can start making edits and then click save.
