If you go to your Content on ArcGIS Online and navigate to the Data tab, you can select the "Assignment Types" table, turn on the GlobalID field and it will show you in there what the ID that shows in the main Assignments table is connected to. Certainly not the cleanest, but it works. You could also add the feature layer to ArcGIS Pro to view the data depending on your needs.
