Tapping One Button Turns OFF the Other: Line Transect Effort Logs

Thank you for helping me try to solve this issue! I am not sure how to phrase this or the keywords used to search in geonet for an answer so I appreciate any and all input!
When we have field workers go out they will have a line being recorded, either as OFF or ON. These are the options with the domain. I want the line recording the entire time, but switching between the two options based. So If they have the "ON" button turned on but then tap the "OFF" button it will automatically turn off the "ON" button, splitting the line into a new segment without a significant gap in the transect. This will cut down in field worker errors of potentially collecting both at the same time.
Additionally able to turn off the "ON" and "OFF" buttons by tapping them a second time if the work is completely done for the day.
I am currently in testing mode to see if quick capture would help us move from a paper effort log to field-functional app.
