Can't uncheck black and white check box when printing

For some reason the printing options are requiring me to only print in black and white for the plotter. Oddly for a different 8x11 printer I can do color. Any advice?  Using ArcGIS PRO 3.1.2 and trying to print to an HP Designjet 510. I tried printing a pdf through adobe and it didn't force the B&W print, so I'm thinking this is Pro and not the printer.  Thanks in advance for any insight!

Does setting the Tiling to Actual when printing the map have the same outcome?

Thanks for the suggested work around. Unfortunately adjusting that setting doesn't solve it. Any other ideas?

Hi Erik, were you able to determine a solution for this? I am encountering the same issue with printing to the office's plotter - I am unable to uncheck the "print black and white" setting and it is greyed out.
