Creating a graduated color map

I have been racking my brain trying to create a graduated color map. Currently, when I follow all steps required, the map ONLY shows points in a graduated color scheme. I want my polygon shapes to be in color. Am I missing a step?

All data is from a CSV file with two columns, labeled zip codes and percentages.

Software version: ArcGIS Pro 2.4.0

If the csv is joined to the polygon's table, then save the joined file to a new file to make the join permanent and see if that makes a difference.   Also check to make sure that the fields are numeric

Thank you, Dan! I am unsure what the problem is. I am very new to GIS. I recently received a 2-day ArcGIS training with ESRI. I am also very inexperienced with the terminology and such. However, I think I figured out the problem.
