I am seeking clarification on cell size for mosaic dataset images. For example, I create a mosaic dataset in UTM Zone 18N. I add rasters that also have the projection set to UTM Zone 18 N, with a cell size of 1m. Yet, the resulting mosaic dataset Image has a cell size 4?, 5? oreven 6? orders of magnitude smaller, for example:
Note also how large that image is, in terms of rows and columns.

It appears that the cell size of the input rasters is not being honored. This was a mosaic dataset built with a number of tiled rasters, all the same source, resolution and projection. (I would expect to see a different/computed cell size had I loaded multi-source, multi-resolution imagery.)
I'm not sure I understand what's happening under the hood, but it results in a mosaic dataset that is rendered unusable.
In the past I've built mosaic datasets with 5-cm, UTM imagery seemingly without issue.
