Is there a way to apply pre-defined CAD symbols to feature services that are brought in to AutoCAD?

Yes there are two different types of pre-defined symbology that you can use with feature services in ArcGIS for AutoCAD. One method is to anticipate the layer name and create AutoCAD layers in your drawing where you have defined the default layer symbology for COLOR, LINEWEIGHT, LINE STYLE etc....
The other pre-defined symbology deals with AutoCAD blocks for POINT type features. You can define an AutoCAD block with the same name as the feature layer and whenever ArcGIS for AutoCAD draws that feature service POINT layer it will insert your block with that name instead of the default point entity.
