After publishing a hosted feature layer and creating a Smart Form for one of the feature classes in that layer, any feature classes without Smart Forms are impacted. The impact is that when collecting a feature in the Field Maps mobile app, the fields are presented in alphabetical order. It's preferable to present these in attribute-table order instead, as alphabetical is almost never the desired order.
