I can't find the relevant information online so hopefully someone can answer this question.

Is it possible to use locally stored data when using ArcGIS online as opposed to storing and using data in the cloud?

The data I am working with is of a sensitive nature so would need to be stored on local servers.

No, it isn't really possible to use local data with ArcGIS Online and keep that data local. Portal for ArcGIS may be a solution for you.
