Saturated raster when exporting (force RGB enabled)

The original rasters I'm using seem to have their information packed as 256 bands (top image - jj01se.tif). I need to convert that raster to a 3 band (or RGB image) to use ArcGis Pro classification features. The most obvious solution is to export the raster with "Force RGB" enabled. Unfortunately, this causes a number of problems with over saturation and color changes. Is there something obvious I'm missing here? I've been banging my head against the wall on this one for about a week.

Any input would be greatly appreciated.
