This services admin page can be used to update aspects of the service definition including changing the schema, adding/changing copyright text, or changing any other aspect of the definition- like the max record count. See this blog post and this doc for more information. Be careful though, because you can corrupt your data very easily. Always make a copy!

Story Maps are incredibly cumbersome to manage. The content on the side panel needs to be maintained in addition to the content in the web map(s). It would be a huge enhancement to have the ability to dynamically input layer names, field names, feature attributes, and more to the side panel content.

Yes, it is possible to clear the contents of the actual text box, but that does not reset the entire results page. I would like to be able to clear the search keyword and the search results. Also, a way to view previous results.

The Apps menu is new to ArcGIS Online. I want a way to customize what appears in this menu for my organization. I build my own custom apps and I would like to feature them here (Rather than creating an item, adding it to a group, and trying to feature it on the banner). I want to customize the order they appear in (Not by name or by date, but by a hand-picked order).

FYI: You can use the ArcGIS Online Assistant to move an entire content structure from one place to another, whilst maintaining all you ask for. I only wish I saw your question sooner to show you this. It has some limitations, but I believe it solves your problem. You can also log into Pro from multiple Orgs and Portals now and use data from multiple sources to build maps and apps or "Projects". I wonder if there is a way to leverage Pro to achieve this process as well...
