featureclasses need a defined coordinate system, so if it was not defined, or more importantly, defined wrong, then you need to define it correctly using Define Projection (Data Management)—ArcGIS Pro | Documentation Once defined correctly and you want it in another coordinate system, you need to use this tool Project (Data Management)—ArcGIS Pro | Documentation So "define" correctly, then "project" to get it into something else. You can substitute or change the order and "defining" something that is defined incorrectly doesn't work

try exporting to a featureclass/table in a file geodatabase. shapefiles don't support 64 bit objectids 002809: Field <value> in <value> is of an unsupported type for the output workspace.—ArcGIS Pro | Documentation you could downgrade it after (see the link) and try to get it to a shapefile if you must Addendum If the objectid isn't 64 bit did you navigate to a folder to specify the output shapefile, ensuring you added *.shp to the filename?

"pinned" in the arcgispro-py3 or a clone of it means that trying to install a package that doesn't support the specs will potentially cause issues or failures. You can't use the package manager to try and install a package that isn't supported by conda, you will have to use the command line and a "pip" install Package Manager—ArcGIS Pro | Documentation and only try to do pip installs in your cloned environment.
