Are you are trying to edit from within the map viewer of ArcGIS.com? Then you would create a web map and add the URL to the feature service, not the map service. The fact that your service is not accessible from the internet can cause problems. ArcGIS Server 10.1, SP1 supports editing services behind a firewall using CORS. Actually, we did debug this and found that your server is returning a 403 forbidden message when we attempt to connect from our API. Our developers asserted that there could be some rule set up on your web server that prohibits connections like this. From the browser, the connection is allowed.  Perhaps you can investigate how your web server is configured with this regard.  We have made a change on our side to ignore this error in this case. When you say it shows 3 results, what do you mean exactly? Are you doing a search outside of the map and find 3 results? When you search for layers to add to a web map, only items that are layers that reference services can be found and added from the search for layers option of the map viewer. There is also a checkbox on the Search for layers panel that says "within map area" which mean only layers that fall within the current map area will be listed. Three of your layers are hosted tiled service, meaning they are pre-created tiled images. For these layers, you can't turn off the individual sub-layers inside of it because the tiles are just images and are generated when you generate the tiles. Thus, they can't be dynamically changed. I assume you have a hosted feature service. What you could do is create a set of hosted tiles from it by using the Publish button on the item page of your feature service. This creates a set of static, tiled images of your data. Note that generating tiles for a wide range of scales can get costly... Typically, when you enable feature access, you get two services: a map service and a feature service. It's the feature service that supports editing, if you've enabled it. This is the service you need to add to your web map. Is your feature service publicly accessible on the internet?
