In the Layer Properties go to the Symbology tab then choose the Graduated Colors option. Select your field containing the values, set 10 classes then click on the Classify button. You can then click on any of the colors and change it to match your desired symbol. EDIT - you will actually need 14 classes and you will need to change the Range values to match your example.

Yes - you will still need to get your data into the new schema. I haven't seen any tools within ArcGIS Diagrammer to do this.

Service definitions are *.sd files that contain the information required to publish a service. You could ask the service authors if they created service definition files. Also, I haven't used this but there is a tool to import the properties of an existing service. I am not sure if this tool works across different servers.

If both servers are running the same version then you should be able to just publish to the new server using the original service definition files. You may need to ensure that any required Data Stores are also configured on the new server.

Jayanta has already mentioned one - ArcGIS Diagrammer is a useful tool for creating or adjusting a geodatabase schema. If you create your new schema FME Desktop has some good tools for mapping data from a source to a target feature class. It is a commercial product but it may save you some time. The alternative is using the Simple Data Loader or Append tool.

ArcGIS Administrator is where you enter license details. There should be an Authorize Now button that walks you through the process. However, you will need to enter a registration key that you get through the trial or home use license. It may be best to contact your local ESRI distributor to complete this step.

I am assuming that you have already done this but the Service Editor - Analyse button would be the first place to start. This will highlight any major performance issues but won't give you any metrics on minor changes. I haven't come across any tool that provides the level of detail you are after and would be interested in other responses as well.

If you are referring to the feature attributes then the values will be in the coordinate system of the source data. When working with a map service you can access the spatialReference property. However the SpatialReference class does not contain a property for linear units. If you need the linear units then you could create a function to lookup the value based on a WKID. If you are just learning ArcGIS and not using it in commercial projects then it would be worth getting ArcGIS for Home Use - http://www.esri.com/arcgis-for-home ArcGIS Explorer is different from ArcGIS Desktop. You will want to learn the desktop version as Explorer is more of a spatial data viewing application. As Tim suggested, ESRI offers a lot of material on their training site. The help system has a heap of material to get you started - ArcGIS Help (10.2, 10.2.1, and 10.2.2) Start with the basics of ArcMap before moving on to other topics such as creating a geodatabase. You should be able to open the Harvard GIS tutorial data in ArcMap. The ArcGIS download site also includes a lot of optional tutorial data.

Dan is correct about the indentation issue when looping through the field names. You want to output each field name for each feature class so you need to nest the fields loop within the feature class loop. This partial example adds all of the field names to a python list and then outputs the feature class name followed by the fields: fcName = fcList

The feature layer edit-complete event returns a list of FeatureEditResults. This only has a limited number of properties to indicate if the operation was successful. To get the length of the new shape you would need to query the feature layer using the objectId property of the new line. You can define which fields to return in the query so you should be able to get the shape length.
