Hi @MichaelEwing1 , the first thing I'd try is to redraw the waterbody polygon so it precisely follows the edge of the water. The height of the water is determined by sampling DSM points within the polygon. If too many points in the polygon are higher than the water's surface (sometimes caused by over-extending the polygon) it could have the effect of increasing the height of the water.
If that doesn't help, agree with Nico to please open a ticket so we can look into it in more detail.
We tried precisely following the edge of water first but it didn't work. We found and followed this thread Improve the quality of water features using a Wate... - Esri Community which recommends moving waterbody mask inland but are still getting elevated water surface.
