I have a SQL Server geodatabase, in this geodatabase I also have several rasters in it. Using automatic backup option it do a full backup with the 250 GB of rasters. Is it possible to do a full backup but telling SQL do not backup my Rasters?

You could look into SQL Server Import and Export tools.

You would have to make sure that you exclude all the appropriate raster tables. This may be a mess.
Can you export those rasters to disc then reference them in a mosaic dataset? If you can do that, it would probably have quite a few benefits for the geodatabase.
I would concur with George Thompson as my org used to have rasters in SDE, but we have moved them to disc and reference the files in a Raster Mosaic Dataset.
Are you currently using the Image Server role of ArcGIS Enterprise?
