Well, one thing you can do is use the Image Analysis tool to sharpen the image and change the contrast so that the Image Classification tool will pick up the features that you want. Then you can, of course, convert the resulting raster into polygons. Once you have the polygons, you can fine tune them with the standard feature editing tools.
That seems to be the right tool, thanks Pavan. But i still didn't figure out to get good results. I am greatful for hints to maximize results of this image with image classification.

i didnt figure out, how to sharpen the image or did i use the wrong tool?

i managed work with the image analysis - thanks! didnt get the results at the moment i want to but still trying on. perhaps it's neccesary to edit this difficult images in photoshop before arcgis use. i'll write again after checking out the best solution.
