Hi everyone,

I have the utility network created, and, I'll have some data to load now, in a little city for example. If I disable my topology, create a version and append/load data, after enable topology, validate the data and run reconcile and post, the UN will work correctly? This is the correct way to load data into existing UN?

That will work, but it will be much slower than the process that is typically used. Assuming you already have the data migrated, you can use the approach described in the deploying a utility network to ArcGIS Enterprise article.

The UN will work correctly in this workflow.  However, disabling and enabling the database repeatedly will significantly increase the size of the network tables in the database.  Although under normal usage, this should not impact performance, it will impact things like database backup time.  I'm not sure how many times you plan to do this, but if multiple times you will not this behavior and it is expected.
