I am trying to run the task "Create Single User Geodatabase with Schema" and I keep running into a topology analysis exceeding threshold. Our data is currently 8gb, would the size of the data be causing the error?

The error is telling you that you have more topology errors than the specified max. When running the asset package to geodatabase tool, uncheck the option to post process. Then when you've successfully run the tool, run the enable network topology tool separately. There, you can bump up the max number of errors.
You can just call Enable Network Topology on the result. Even though the tool errored, the error only affects the updating of the utility network data. All things you can call on your own. The steps that did not complete are Enable Network Topology, Update Is Connected, Update Subnetwork and Analyze.
