In regard to <b>Snowmobile Trail: Alternative 1</b> showing up in the serial chart, Your question is:
Is there a way to change this in the dashboard so that the tags aren't showing up?
I think there are two possible solutions:
1 - Remove the <b> tags and show the title as plain text (no formatting)
2 - Actually apply the <b> tags so the category labels are bold in the charts.
I don't think we would ever try to implement (2) because it's not a great idea to store label formatting within the layer's attribute table. Usually we try to separate the data in the table from how the data is displayed. If you want to make the labels bold.
To get our heads wrapped around (1)...the way serial chart displays field names is that we try to use the field alias whenever possible. If the field alias is not available, we default to the field name. I would first check your layer to see if these <b> tags are present in the field alias. Take a look at this layer I just created:

If I pull this layer into dashboard, I see the tags in the chart just like in your dashboard:
If you go into the fields and remove the <b> tags from the field alias (Also called Display Name), it will remove them from the serial chart.
If you actually want to make the labels look different on the serial chart, you can change the 'text color' option on the Dashboard Level Settings page which will propagate to the serial chart labels. I recommend this approach as opposed to trying to format things by putting html into field names/aliases.
