I want to setup a Point feature layer and I want to feature display different color base on the value of the field. How can I do it in ArcGIS Pro?

Since you didn't say whether your data is nominal (apples, oranges, pears) and/or quantitative (1, 2, 3, 4, etc), I'll leave it up to you to read through the two articles and play with your options.

There's a lot of options depending on the type of data you're working with. You can find the options in the symbology menu:
In your ArcPro table of contents, make sure you click on the layer you want to symbolize, then click on the Feature Layer tab:
Using the dropdown, you can select the symbol style. Unique values is a common choice, and it will give you a list of all the available values in the field you choose:
