Remove overlapping areas between two features

I have a polygon in a specific shape and I want to remove this area from a raster. Specifically, I have a polygon outlining prairie soil in Illinois, and I want to remove this area from the USA soils crop production raster. When I use the clip raster function, it clips out in a rectangle the area around the prairie polygon. 

 

I need to either make the prairie values zero or remove them from the raster. 

 

Please help!

You can use Extract by Polygon (Spatial Analyst) , choose extraction area as "OUTSIDE"
