How do I prevent hatch-fill symbology when adding more than 5 classes?

Currently, I am trying to symbolize the USA counties map based on certain fields; however, when I click more than 5 classes, the solid-fill symbology converts to hatch-filled and the only way I can find to change it back is going in the symbol properties for each and every class, which takes a long time. 

I have no clue why ArcGIS Pro wants to convert the fill-type just because I want more classes in my symbology. Does anyone know how I can prevent this or at least change the properties of every class all together so I dont have to do it for each and every one? Thank you.
