Whenever I move the cursor or zoom in and out of my map, the whole map flashes pink and blue and blocks of colour appear and obstruct sections of map near the polygons I created, is there any way I could get this back to normal?

you have to change to a new symbology perhaps
and I would suggest running a Check Geometry on your polygons incase something is amiss with it. or something you were doing with it

What version of Pro are you running?
Have you updated your video drivers?
Thanks for responding,
my video drivers are up to date and the version I am using is 3.4, the map was completely fine until I changed the symbology on the two layers, one of which held my polygons, so I am thinking it may have something to do with that? But I don’t know how to get rid of the colours

Thank you for you’re advice,
I have run the geo check and it came back saying no problems were found, I’ll try changing the symbology and see what happens.
