Comparing IDW statistics between multiple layers

Hi all,

I'm currently in the process of using IDW as a spatial interpolation technique for feral pigeon data as part of a Master of Environmental Science unit down under in Australia.

Essentially I've got three final outputs (each representing pigeon numbers across three time-periods) that I would like to calculate the significance between (usual p-values, means etc.). 

Each dataset was entered as point data (up to 9 sites throughout a port region), which contained coordinates and total pigeon counts across each site for up to 20 days (each entered as a total count for each site day-by-day). Each day for each of the three time-periods was placed into the IDW tool, and once each day was interpolated, the layers were divided by the respective number of days for that period in the Raster Calculator to generate the final IDW surface.

Have been searching for a method for quite some time now and was hoping someone would know what is the best approach to this!
