Currently ArcGIS Pro default export location is the last place something was exported to globally.  This should be set to the last place something was exported to for each project, similar to ArcMap. The default should be the project folder.

When setting the export path whilst exporting a layout ArcGIS Pro's default behaviour seems to be to want to default to the last location you created an export to from any other .aprx

This is strange behaviour and cumbersome, for those of us who work with lots of different aprxs on a regular basis - having to manually re-navigate to the default folder associated with the aprx. The fact that a default folder can be set in the project should mean that location becomes the default export location for layouts, in the same way a default geodatabase becomes the default export location for data.

Thanks @DanPatterson . Hadn't spotted that (and haven't upgraded just yet) but it seems like that will hopefully do the job. I knew it couldn't just be me 😂
