Setting default values in web maps

In my workflow, I want to use the same hosted feature layer, but be able to apply different default values for two different web maps. I've noticed the default values are applied at the hosted feature layer rather than at the web map level, which keeps creating issues in this regard when editing data through collector. 

Ideally I would like to be able to set the default values similar to the symbology or the filters

Any advise or update in any implementation in this regard will be highly appreciated.

You can create a new layer view, then create a different editing template for that new view. Within the editing template, you can then define a different default value.
